Here’s my Healthy Quinoa and Kale Recipe

You have probably heard about quinoa. It’s a grain that is both high in protein and fiber. It has become quite popular recently especially with those on a gluten free diet. Pure quinoa is gluten-free. If you follow a gluten-free diet be sure the quinoa you purchase is labeled gluten-free. Some have added ingredients. Anyway, I love quinoa and coming up with different recipes that include quinoa. Here’s my Healthy Quinoa and Kale Recipe (with optional Chickpeas) that is made with my special Simple Tasty Kale Recipe with numerous options.

The other day, I had some leftovers of my kale salad. I wanted something a little more filling for lunch so I decided to make a creation with the kale and quinoa.

How to Cook Quinoa

First, you’ll need to cook the quinoa.  I typically use 2 parts water to one cup quinoa.  Before cooking, be sure to rinse off the quinoa in a strainer.   I started by boiling 2 cups of water.  Once the water boiled, I added one cup of rinsed quinoa and let it simmer for 20 minutes.  You should not need to drain any water.  Just stir the quinoa.

Adding the Kale

I put my extra Simple Tasty Kale  in the food processor and then mixed it in with the quinoa.

You may want to add additional seasonings like salt, pepper, and lemon juice to taste.

If you want more protein, add some beans such as chickpeas.
